Easy Irish Potato Nachos Recipe
These Easy Irish Potato Nachos are the ideal supper or canapé for St. Patrick's Day.
Cooked potato rounds are finished with cheddar, harsh cream and chicken for a filling and heavenly treat!

Ingredients
6 potatoes medium measured
3 tbsp olive oil
1 tsp dried rosemary
1/2 tsp dried thyme
salt and pepper to taste
1 container cheddar ground
22 oz Cooked Perfect Fire Grilled Chicken Bourbon BBQ pieces
Discretionary Toppings:
sharp cream
tomatoes hacked
cilantro
green onions hacked
jalapenos
dark olives
Method
1-Preheat stove to 400 degrees. Line an expansive treat sheet with non-stick foil or material paper.
2-Wash potatoes and dry well. Cut into 1/4" cuts and spot in huge bowl. Include olive oil, rosemary, thyme, and salt and pepper to bowl. Blend well until equally covered. At that point spread potato cuts onto lined treat sheet. Prepare for 20 minutes
3-Remove from stove and flip over. Set back in broiler for another 18-20 minutes. In the meantime, place chicken on a second treat sheet and cook for 18-20 minutes.
4-Remove potatoes and chicken from stove. Exchange potato cuts to a cast iron dish. Sprinkle with cheddar and come back to broiler for 3-5 minutes or until cheddar liquefies.
5-Remove from broiler and best with chicken and your preferred garnishes!
