This chicken is so absurdly delicious, you won't ever need to broil your chicken in the stove. Don't hesitate to blend and match veggies: sweet potato, ringer peppers, or fennel would all be heavenly substitutes

Fixings
1(3-lb.) entire chicken
1/4 tsp.kosher salt
1/2 tsp.freshly ground dark pepper
1/2lemon
2sprigs rosemary
2 tsp.extra-virgin olive oil
1medium potato, scoured and split
1/2 c.chopped onion
1stalk celery, cut into 3 pieces
1carrot, quartered
2cloves garlic, cut
1 c.low-sodium chicken soup
1 tbsp.freshly hacked parsley, for trimming

Turn on the Instant Pot, at that point pick the Sauté program and the Normal setting. Season chicken with salt and pepper and place the lemon and rosemary in the cavity
